I was most excited the other day to finally find a gluten-free pastry recipe that worked and didn't taste horrible or fall apart in my hands or turn into a chewy board. And now I have someone to share the excitement with... I hope :)

Being Aussie, I immediately made myself a meat pie (made with a little lamb mince and heaps of vegetables and just a bit of gluten-free flour in home-made chicken stock to hold it together) ... a meat treat I really shouldn't eat too often. But you could just as easily make a vegetable pie. Or my other treat is a sugar-free but very yummy pumpkin pie.... but I might share that recipe another time.

I adapted the recipe from "Rosemary's savoury pastry" recipe to be found on www.bbc.co.uk/food

My version of the ingredients:
1 cup All purpose Orgran Gluten-free Wheat-free flour
150 gm soy butter
1 egg

See the website for how to put it together. It isn't as pliable as wheat pastry, but it does the job and tastes quite good.

I certainly enjoyed my pie :) I'm sorry I didn't take a photo for you.... maybe next time.

I am interested in the yummy pumpkin pie details :-) I am allergic to soy though and use rice milk for my milky needs.

I have the pumpkin pie recipe to hand as well, so I may as well add it now :). I have adapted it from an old recipe mum used to cook when I was young....

2 large eggs (beat)
3/4 tspn cinnamon
1/4 tspn nutmeg
1/4 tspn salt (I don't usually add this)
1/2 cup of date syrup (I heat some dates in a little boiling water until they go all mushy, then strain it)
1 cup coconut milk (or soy milk, or rice milk)
1 and a half cups cooked and mashed butternut pumpkin (the sweeter the pumpkin the better)

Put all ingredients together (make sure the pumkin is cool before adding it to the egg/spices/milk mixture), mix well and pour into uncooked pastry. Bake for 40-50 minutes in a moderate oven until the centre is set.

It is yummy hot or cold... but not too much at once :)

oh... delighful - I am in trouble now! Thank you! I am slightly allergic to eggs too, but, I can deal with a little discomfort from time to time...

Have you tried the pumpkin pie yet? I am trying to find the time to cook it again... have slight cravings.

I find that if I eat high protien low carb and get my excersise that my brain works much better. The recipe for this crust is a good one to put just about anything in. It's so Yummy!

I love this pie crust!

Yummy crust

½ cup oat flour
1/4th cup oats
1/4th cup Brown Sugar
½ tsp cinnamon
2 Tbls oil
½ cup water

Or make it this way

1 ¼ cup oat flour
1/4th tsp salt
2 Tbls oil
1/3 cup water

Mix all until crumbly
Put in pie plate and press in
Or (better like this) roll out and place in pie plate.

Just a note - those on a gluten free diet must be very careful about oats, but Bob's Red Mill does have gluten free rolled oats. I've been using them for over a year with no reaction, and that makes me so happy because I'm extremely sensitive to the slightest amount of gluten.

(I have also found that low carb eating is better for me, though I haven't perfected sticking to it yet.)
