Well, I have finally learned how to....(Hold your breath)....make scrambled eggs in the microwave!!!! Yes, yes, I have!!! It is awesome!!!
Hey, this is a big deal for me! That is why the post is called celebrating the little things.
I have decided that I am really not getting enough protein. I had gastric bypass surgery a few years ago, so there is a protein target that I am supposed to hit daily, and I have been falling short lately. Hence, the microwave scrambled eggs.
Now, you have to realize that I am doing this IN THE MORNING, yes, that's right, that really rushed time of the day, when my meds have not yet kicked in. I don't have the time (or safety equipment) required to make eggs the old fashioned way right then. It finally occurred to me to google making scrambled eggs in the microwave.
So, I have done it, and have just finished my morning egg. After all the excitement of making it, it tasted like, well, scrambled egg. I don't really like eggs, actually. Scrambled is the least objectionable for me. However, I add some garlic powder when the egg was raw, and some cheese part way through cooking. Then I added some ketchup on the cooked egg. That made it okay. (Note to self, and everyone else - if you husband absent-mindedly picked up some sort of hot and spicy ketchup, that you didn't know existed, and seems to actually be some sort of alien plot to burn the human population alive from the inside out, make sure that is NOT what you put on your eggs - if fact, just throw out the giant, full bottle of the stuff - it is not really food, if that makes you feel better about throwing out a full bottle - it is a biological weapon of some kind, I swear it is!)
Anyway, I have finished my egg, and feel quite happy with myself - for figuring out a solution to this tricky tangle, and starting off my day with protein!!
Celebrate the small stuff!

I am not keeping it a secret - I just figured everyone already knew how!!
However, for anyone who doesn't know, here it is.
Break an egg into a coffee mug. Add a tablespoon of milk, and salt/pepper etc to taste. Beat it up with a fork.
Put the mug in the microwave. Take it out and stir every 40 secs or so. When the mixture is still somewhat wet, add some cheese, or what ever you like in your eggs. Continue to microwave. When the mixture is just a slightly bit wetter then you would like, it is done - the egg keeps cooking in the mug, so if you put it back in the microwave, it ends up overdone.
It takes about 1:50 secs total of microwave time (I think).
And then, voila, scrambled egg!!
